Curry mango rice


This curry rice with mango is a perfect side dish and you can serve it with a roast chicken or a roast beef.


Ingredients:

4 cups precooked long-grain rice

1/4 cup olive oil

1 Tbsp minced garlic

2 1/2 Tbsp Ka’iulani Exotic Curry

1/4 cup dried cranberries

2 mangos, diced small

1/3 cup chopped cilantro

3-4 stalks green onion, sliced fine

2-3 Tbsp toasted, slivered almonds


Instructions:


1. Heat olive oil over medium heat


2. When oil is heated, add garlic, Ka’iulani Curry, cilantro stems and cranberries


3. When garlic is golden, add the cooked rice


4. Mix well, adding curry until the rice is a golden-yellow color


5. Fold the mangos into the rice and add most of the green onions and cilantro leaves and mix again


6. Sprinkle remaining green onions and toasted nuts on top


7. Enjoy!
